This is a signature dish for Joe Wicks, when I first saw it I was reluctant to give it a go but I’m sure glad I took the plunge. It contains a fantastic amount of healthy fats and takes no time at all to whip up.
INGREDIENTS
1 ripe avocado
2 eggs
salt and pepper to taste
METHOD
Cut your avocado in half, remove the stone and scoop out a section of flesh from each avocado to allow room for the egg. Save the leftover avocado to eat on the side.
Crack an egg into each avocado half, season with salt and pepper and place on a microwavable plate. Cook the eggs in 30 second bursts for roughly 2 minutes. Once the whites are firm and the yolk is running, set aside to cool for 1 minute.
