This is a mouthwatering alternative to classic ‘spag bol’. The mixed beans provide a hearty alternative to ground beef and keep you feeling full for longer.
INGREDIENTS
1 Tbsp olive oil
a little water
2 white onions, chopped
4 garlic cloves, crushed
2tsp mixed dried herbs
1 pack mushrooms, sliced
2 tsp vegetable bouillon powder
2 Tbsp tomato puree
1 can (796ml) diced tomatoes, no salt added
2 cans (540ml) mixed beans, drained and rinsed
Himalayan salt and ground black pepper to taste
Organic brown rice pasta or quinoa pasta, cooked according to directions.
METHOLD
Steam the onion, garlic and herbs in the olive oil and water for 2 minutes, then add mushrooms and cook until soft.
Add vegetable bouillon powder, tomato puree, tomatoes and beans. Season with salt and pepper and simmer for 15 mins.
Serve with organic brown rice pasta.
